Using Holiday Leftovers: Potato Pancakes in the oven

potatopancakes2.jpgMashed potatoes are a holiday family dinner staple. Here is a way to use up your leftovers. Potato pancakes are a delicious meal at any times of day. These can be done en mass in the oven.

Ingredients:

4 cups mashed potatoes
1 egg, lightly beaten
1 teaspoon minced garlic or ½ teaspoon garlic powder
¼ cup minced onion (fresh or dried) or ½ teaspoon onion powder
salt and pepper
1 8-ounce tub sour cream for garnish
¼ cup chives for garnishpotatopancakes1.jpg

Preheat oven to 500°.

Combine potatoes, egg, garlic, onion, salt and pepper.

Drop large balls of potato mixture onto greased baking sheet or Silpat. Flatten to about ½ inch thickness.  

Bake for 10 minutes on each side or until bottom is crispy. They can be difficult to flip, use a long pancake turner if you have one. Let cool 2-3 minutes before serving.

Top with sour cream and chives.

Makes 6-8 potato pancakes.
