Spicy Eggplant Fritters

These eggplant fritters make a tasty appetizer that is best served hot.

The most  important thing to be careful is when mixing your dough. If there is too much water in your batter, it will be too loose, and you will increase the chance of splattering out of the oil. Make sure the batter's consistency is just similar to pancake batter.

Ingredients

  • 1 medium eggplant
  • 1 cup all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne pepper/paprika
  • water as needed
  • 1 cup oil
  1. Cut the eggplant into 1/8-inch thick slices. Set aside.
  2. In a mixing bowl, mix all purpose flour, salt, cayenne pepper and water. Remember, the mixture should have the consistency of pancake batter.
  3. In a large frying pan, heat oil over medium heat (Deep Fryer can also be used). Take 5-6 eggplant slices and dip them into the batter. Both the sides of the eggplant should be coated well with the batter. Place the slices in the hot oil and fry both sides until golden brown. Remove these and place them on a paper towel to absorb excess oil.
  4. Serve with tomato ketchup.
