The holidays are here and with that comes holiday treats and meals.  We must however take proper precautions to avoid getting ill during the holidays and enjoy it to its maximum.

During the holidays many tend to go a bit overboard with cooking and eating and they always use the same excuse - 'It's the Holidays'.  Unfortunately many people will not take the proper precautions when cooking their meals and will get very sick. 

There are some simple tips to keep in mind when preparing your holiday dishes.  Some are common sense, but believe it or not many of those are forgotten during the stress of the holiday season.

1. Never defrost your meats, poultry or fish on the counter.  It is best to defrost in the refrigerator to avoid bacteria growth.

2.  When cooking meats, or poultry be sure to cook fully.

3.  Simpliest tip but often neglected - wash hands thoroughly after handling meats, poultry or fish.

4.  Designate different cutting boards and knives for meats and herbs.  If this is not possible be sure to wash in sudsy warm water before using.

5.  Never leave leftovers sit out on your counters overnight.  It is best to let the food cool down and then refrigerate promptly.
