Recipes for Moms - Breakfast Recipes
This is a breakfast that can be prepared the night before, or leisurely prepared on a weekend. Many variations are possible, and that lovely thing about eggs, is they go with everything!
Now remember, we feed a small army at our house, so my recipes will always be large quantity. Save some for leftovers, or half the recipe for a small family.
- One Dozen eggs
- One chopped onion
- One chopped red pepper
- One cup chopped Ham or Bacon
- One cup grated Cheddar (We use more, we like it cheesy.)
- Salt and Pepper
- Butter
Set oven to 400F. Use the butter to grease a 10X13 inch casserole dish. Beat the eggs in a bowl. Sprinkle onion, pepper, ham in bottom of dish and season with salt and pepper. Pour eggs over top of ingredients, and season lightly again. Sprinkle cheese over top. Bake for 25 to 30 minutes or until it is not jiggly anymore. Ha, scientific huh?
Here are some variations that you could also try:
- onion, spinach, chicken, and feta.
- peppers, onion, ground beef, mozzarella, served with salsa.
- Layer bread in bottom of pan and add cinnamon and nutmeg to egg mixture. Leave out cheese or use ricotta. Serve with strawberry jam or your favorite fruit spread.
