Hidden Veggie Mac-n-Cheese

Once a month, I make lunch for my son's school. Before you panic, there are only 34 kids in the private Latin school. They always ask for the mac-n-cheese that I made the first time. I also make pigs in a blanket that is healthy too and they love it but this is first choice. The original idea came from The Sneaky Chef, which is an awesome book.
Hidden Veggie Mac-n-Cheese
- 5 lbs of elbow pasta, partially cooked, al dente
- 4-5 "boxes" of low fat Velveeta Cheese
- One large Sweet Potato
- 5 full size Carrots
- 1/2 head of Cauliflower
- 1/2-1 Cup Whole Wheat Bread Crumbs
- 1 Stick Unsalted Butter
Steam the vegetables until soft to keep the nutrients. You can also boil the vegetables and use the water from them to boil the pasta.
Finely puree the vegetable together and set aside to mix with the cheese.
While the pasta is cooking, melt the cheese in the microwave. Add enough milk to make really creamy but not watery. Mix in pureed vegetables a little at a time making sure that the mixture remains creamy. Add more or less to taste. Add to cooked pasta.
I then bake the macaroni and cheese in a 350 degree oven for 25 minutes or until the top is lightly browned, topped with whole wheat bread crumbs and a couple of pats of butter on each pan. I make two full pans for these hungry growing boys and their teachers!
