Tips and Advice - Baking

This recipe is a yeast dough baked on the stove top. Yuu can do it by hand or use your bread machine to mix the dough and finish in a skillet. You'll be amazed at how easy they are to make.

You need:

  • large mixing bowl
  • large greased bowl
  • damp tea towel
  • cast iron skillet
  • large biscuit cutter (3 or 4 inch)
  • pastry or cutting board
  • rolling pin
  • cooling rack

Ingredients:

  • 1 package active dry yeast
  • ½ tablespoon sugar
  • 1 ½ cups warm water
  • 1 egg, beaten
  • ⅓ cup honey
  • ½ teaspoon salt
  • 4 ½ cups all-purpose flour

In a small bowl, dissolve yeast and sugar in warm water.

Let stand until creamy, about 10 minutes.

Beat in egg, honey and salt.

Add flour 1 cup at a time until it forms a soft ball.

Turn out onto floured board and knead until it becomes smooth, about 5-7 minutes.

Place dough in greased bowl and cover with wet tea towel. Let rise in warm area until doubled. About one hour.

Bread machine: Add ingredients into machine according to manufacturer's instructions. Mine is water, flour, everything else. Let rise until doubled.

After dough has doubled, punch it down.

Turn onto floured board and roll to ½-inch thickness.

Cut with biscuit cutter and place in warm area to rise until doubled. Cover with damp tea towel.

Heat greased skillet to medium heat. Dust with cornmeal if desired.

Place 3 rounds in skillet at a time.

Bake on each side for 5-7 minutes until browned.

Cool 5 minutes on wire rack.

Split with fork and serve.

Oven option: Bake on a greased baking sheet at 350° for 5-7 minutes on each side. Cool 5 minutes on wire rack.
