Broiled Scallops on Couscous

This dish sounds intense and time-consuming, but it takes no more than 15 minutes and is a true crowd-pleaser.

Broiled Scallops on Couscous

Prep Time: 5 min.

Cook Time: 10 min.

Total Time: 15 min.

  • 1 box oil & garlic flavored couscous
  • 1.5 lbs. fresh bay scallops
  • 2 tablespoons melted butter
  • 2 tablespoons garlic powder
  • 2 tablespoons lemon juice
  • salt and pepper to taste
  • pinch of paprika
  • 1/4 c. grated parmesan

1.  Prepare coucous according to package directions. 

2.  Drain and rinse scallops well.  Pat dry with paper towel and place in baking dish (one layer).

3.  Combine butter, garlic powder, lemon juice, salt and pepper.  Brush entire mixture over scallops.  Sprinkle paprika over top of scallops.

4.  Broil until tops of scallops are golden brown, or 6-8 minutes.

5.  Sprinkle parmesan on top and serve on top of couscous.

My family likes this dish best with a side of steamed green peas.
