Vegetarian Double Stuffed Tacos |

This recipe can have interchangeable ingredients. Changing veggies and topping, no two taco nights have to look alike. This recipe has made all of my meat eating friends not only fall in love with veggie taco's, but ask for seconds.
Veggie Double Stuffed Tacos
- 1 box of Boca Burger ground meatless meat
- 1 package of 12 hard taco shell's
- 1 package of 12 soft taco shell's (they usually come in 18, but it as long as you have 12, that's the important part
- 1 small bag of spinach
- 1 medium onion
- 1 jar of any favorite salsa (I prefer Paul Newman's Garlic Salsa)
- 1 Red Pepper, 1 Red Pepper
- 1 tub of sour cream
- 1 can of refried beans
- 1 can of black beans
- Guacamole optional
Put in a large skillet the three packets of boca burger grounds and a little olive oil. Saute till warm and then add 1/2 of the jar of salsa, a chopped red pepper and one chopped green pepper, one chopped onion and 1/2 can of drained and rinsed black beans. Saute this all for about 10 minutes.
Take the soft shelled tacos and butter spread them with the refried beans. While you place the hard shelled tacos on a cookie sheet and warm in the oven on 450 for about 5 minutes. Once the soft ones are done take out the hard ones.
Place the hard ones in the center of the soft ones spread with the beans and make a jacket out of them. Now with the double tacos line the bottoms with spinach. Then fill 3/4 the way up with meatless mixture and then top with a little cold salsa, sour cream and if you want guacamole. There you go.
