Stuffed Pepper Soufflés Recipe |

These stuffed peppers make a very healthy vegetarian meal, and the broccoli and the peppers are a rich source of vitamins and carotene. You can use a mix of red, green and yellow peppers to add colour to the presentation of the dish.Quick to cook and prepare, this meakes a healthy snack or starter for a meal, or if you double the quantities and serve with a side dish such as rice or couscous, it will make a filling main course.
Ingredients

Large packet of frozen broccoil, thawed

A mix of coloured sweet peppers, allowing half per person for a starter, and a whole pepper per person for a main course.

2 tablespoons of cream

1 egg, seperated
-
1 egg white
-
salt and pepper to season

marjoram
Method
-
Dice the brocoli and drain away any excess water

Season with the marjoram, salt and pepper

Stir in the cream and the egg yolk

Whisk the 2 egg whites until they form stiff peaks

Fold the egg whites into the broccoli mixture
-
Place s few spoons of the mix into each pepper half, and place in an ovenproof dish
-
Bake for 30 minutes at 180 º C / 350 º F / gas mark 4
Serve with a side salad and crusty french bread.
