Panzanella a.k.a. Bread Salad PDF Print E-mail

This is a delicious and easy summertime recipe and a great alternative to boring pasta salad. Originally an Italian "leftover salad", Panzanella calls for simple ingredients such as day old crusty bread and black olives. What a great way to use up those wonderful fresh tomatoes you've been growing-- bring it to a picnic or barbeque to impress your friends and family!

Ingredients

4 cups of cubed leftover crusty bread (stale is best!)

2 large tomatoes, chopped

2-3 tablespoons fresh chopped basil

1/4 cup pitted kalamata olives, halved

1/2 green bell pepper, chopped

1/2 red onion, chopped

1/4 cup red wine vinegar

3-4 tablespoons extra virgin olive oil

fresh grated parmesan or romano cheese (optional)

salt and pepper to taste

Directions

Whisk vinegar, salt, and pepper in a large bowl. Slowly add olive oil while whisking so that the mixture emulsifies. Add all other ingredients except cheese and toss together. Sprinkle freshly grated cheese on top. Serves 4 to 6

avatar What a wonderfull dish. I had not thought of that yet. I have seen it in the old "real" Italian cookbooks, but no pictures. So I could better "see" it with yours.
