My mother-in-law loved this, she asked me to prepare this for his son's birthday party - who fortunately loved this as well.

Aromatic Butternut Squash Soup

Aromatic Butternut Squash Soup is a warm and filling soup that is super easy to make. It goes well with family feasts and get togethers.  Served with a toasted baguette crouton, and a dollop of Crème frache for garnish, this could serve 4-6 depending on the size and shape of the bowls and how many people you're feeding.

For me, this is a great way to have a good Thanksgiving soup to serve while the turkey is being cut at the table. This recipe does wonderfully when doubled or tripled as well for larger crowds.

By nature, I am not that interested in cooking. Lately, my interest in cooking has been slowly developing because I want to start serving good, healthy home cooked meals for my family.  I want my son's diet to have a higher percentage of veggies and fruits.

The peppers you choose will vary the spiciness of the salsa. I like to use a little of all four kinds. Anaheim and Jalapenos will give fairly mild salsa, and Poblanos and Serranos kick it up a notch. My favorite mix is 6 Anaheim, 1 Poblano, 4 Jalapeno and 1 Serrano chili peppers if I can find them at the store. This makes about 7 pints. You could double the recipe and make quarts.
