Now is the time to get ready for Easter, with this traditional Simnel Cake recipe. The eleven balls of marzipan on the top of the cake represent the 11 loyal disciples. No prizes for guessing which one is missing!Although cake should be eaten in moderation, the wholemeal flour and dried fruit in the cake provide a fair amount of fibre. And the sweetness of the marzipan means it appeals to kids too.
