Summer days are filled with activity. The days are longer, the sun is brighter, and the kids are more active. Grilling is a favorite activity of my family during the hot summer months, but one rainy day can throw a wrench into the best plans for a delicious grilled meal. So on a gloomy rainy day, with kids underfoot, cranky because they can’t go outside and play, what can you make for dinner? Try something quick, easy, and kid pleasing to take away the rainy day blues!
Broiled Tuna Melts
A little twist on the classic tuna melt, this variation uses fresh seafood and fresh veggies from your garden.
What you need:
- Four fresh tuna steaks
- Medium tomato, sliced thickly
- Medium onion, sliced
- Green pepper, sliced
- Four slices American Cheese
- Lemon, wedged
Broil the tuna steaks for three minutes per side. Lightly squeeze a lemon wedge over each steak. Add a slice of tomato, a slice of onion, and green pepper on each steak. Continue to broil for ten minutes. Add a slice of cheese to each, and continue to broil until cheese is melted.
This recipe meets all my criteria for a great meal: Easy, Delicious, and Nutritious!
Turkeyburger MacWhat you need:
- 1 lb. ground turkey
- 1 package Velveeta shells and cheese
- ½ cup ketchup
- 1 medium tomato, diced
- 2 cups water
- 1 small onion, diced, if desired
Cook turkey in a large skillet until no longer pink. Add water and ketchup, bring to a boil. Stir in macaroni, reduce heat, and cover. If desired, add diced onions at this time. Simmer 10-12minutes or until pasta is tender. Add cheese sauce and tomatoes, stir until well blended and serve! You can also try adding a little mustard with the ketchup for a little kick.
