I never enjoyed reading cookbooks, like my mother and daughter. I only want a recipe when I need to get something done. But the internet has changed that. I find myself checking the internet for recipes all the time.
Usually, I like to stick to Pioneer Woman, because her recipes are easy to follow and everyone at my house likes them. We found one for apricot bars that looked promising, but couldn’t find apricot preserves at the store. (We shop at a huge distributor type store that only carries grape, possibly strawberry jam in huge quantities.
We bought dried apricots, though, and I googled apricot preserves. I grabbed the first recipe I found and handed it to my daughter. It turned out great! I should have saved that recipe. ..
It was really easy, so here’s what she remembers doing:
- two handfuls of dry apricots
- sugar to taste
- 1 cup water
Put the ingredients in a crock pot for two hours. After two hours, put it all in the blender. Blend until smooth. Enjoy. Refrigerate any unused portion. We were able to make two recipes of apricot bars from this one recipe for preserves.
