At my house, the dinner cry starts at 4 p.m. Others might be hungry, but there is one insistent voice, louder than all the others. It is mine. One night we threw together this quick and easy sloppy Joe dinner.
What's for dinner? My shrill voice rings through the house. I might not say those exact words, it's more like 'what should we make for dinner?' I implore my future chef daughter, 'you better figure it out quick--we don't have much time!' And some days, she's unavailable, and I figure it out myself. Other days, like today, I'll decide on something, like lasagna, only to discover we don't have all the ingredients.
My daughter has attitude about ground beef, which is so quick and versatile. "How about sloppy joes?" she asked tonight. I didn't care. The beef was defrosted, we had buns in the freezer. "Sure," I told her. And she created magic.
We had about a pound of ground beef, which she browned in a skillet. Then she poured in some worcestershire sauce, followed by barbecue sauce. She salted and peppered for taste, and put hamburger buns in the toaster. She'll butter those down and put the sloppy joe sauce stuff in the buns. If it takes more than 30 minutes, I'll be surprised.
Try it some night when you're stressed and hurried. (That would be about every night for me).
Enjoy!
