As the weather ges warmer, the wonderful seasonal summer fruits begin to appear in the shops and markets. Strawberries are a favourite in my family, and we buy them in huge boxes. Sometimes, however, even my strawberry-loving kids just can't eat them fast enough, and the berries begin to get a little over ripe and soft. Don´t throw them away though, they can be used in simple and delicious recipes that will reduce waste and make sure that every last strawberry gets eaten up!
Here are some suggestions:
Strawberries with Sweet Cream Cheese
Start with this recipe when the berries are still in perfect condition. Try blending a 6oz tub of cream cheese with 4 tablespoons of icing sugar, and then adding 1 teaspoon of lemon juice and a little vanilla flavor. Beat well. Serve the strawberries with the cream cheese mix for an unusual and healthier alternative to cream.
Easy Strawberry Shortcake
Slice the strawberries and serve on top of individual shortbread tails, perched on top of a pile of whipped cream. Tasty and indulgent, but one to watch if you are monitoring calorie intake!
Speedy Strawberry Mousse
This is one for when the berries start to soften and get over ripe. Blend about 8oz of strawberries in a blender with 3 tablespoons of cream and a spoonful of honey. Gently fold a small tub of natural yoghurt into the mixture.Then beat 2 egg whites until they are stiff, and fold this into the strawberry and yogurt mix. Garnish with a few strawberries, and a sprig of mint.
Chocolate Dipped Strawberries
Simple and delicious, and ideal to finish off a meal. Melt about 8oz of good quality chocolate, milk or dark, in a “bain marie” ( a small bowl over a pan of simmering water) Aim for a chocolate with a cocoa content of 70% if you can get it.Dip the strawberries into the chocolate, covering the bottom half of the fruit only, using a cocktail stick. Leave the fruit to cool until the chocolate has set. The kids can help to make these too, but watch out as more chocolate goes in their mouths than on the fruit!
Strawberry Juice
Blend the soft strawberries in a food processor with a half a pint of water and a tablespoon of lemon juice. When blended, add a cup of tropical juice or orange juice. Mix well. Chill and serve over ice with a slice of fruit for garnish. No you have no excuses for throwing away fruit, just get creative and work it into a recipe instead!
