Stilton and Pear Soup Recipe PDF Print E-mail

This is a recipe for Stilton and Pear soup, a wonderful warming winter soup that is quick and easy to make for the family.

Stilton and Pear Soup Ingredients

  • 50g unsalted butter
  • 3 carrots, sliced
  • 1 celery stick sliced
  • 2 leeks sliced
  • 2 pears peeled, cored and sliced
  • 150ml white wine
  • 900ml chicken stock
  • Salt and pepper
  • 150g stilton cheese, or similar

Melt the butter in a pan, and add the celery, carrots and leek and cook for 8-10 minutes until soft. Add the pears and stir.

Pour in the wine and simmer until reduced.Pour in the stock and season. Bring to the boil, cover and simmer for 10 minutes.

Add the stilton and leave for a few minutes until the cheese has melted, then liquidise in batches.
