Over at My Wooden Spoon there’s a new Monday Meme called
Foodielicious Finds. The theme is peppers so I made stuffed bell peppers with
herb & garlic cream cheese. This is a great time of year for produce so I left out the meat and used more vegetables. I also
used orzo noodles instead of rice.
This recipe is for three large green bell peppers so if you
are feeding more people, increase the recipe.
Herb & Garlic Orzo Stuffed Peppers
- ¾ cup of half cooked orzo noodles
- 3 tablespoons of minced onion
- 5 tablespoons of herb & garlic flavored cream cheese
- ½ cup of chopped zucchini
Cut of the top of the bell pepper and scoop out the insides.
The kids love doing this and it’s not as messy as pumpkins.
Add the orzo noodles to boiling water and cook for two to
three minutes. Orzo noodles are tiny noodles shaped like rice but make a nice change. Drain.
Combine chopped vegetables, softened cream cheese, herbs, and spices with the noodles.
If you soften the cream cheese first, it makes it much easier to blend with the
other ingredients.
I find one teaspoon
of oregano plenty because it’s strong and I didn’t want to overwhelm the
peppers with it. Add cooled orzo noodles and stuff filling into peppers.
Wrap peppers in tin foil and bake in a 350 degree Fahrenheit
oven for approximately 35 to 40 minutes. I prefer cooking them in foil because
it helps hold in the moisture and maintain the pepper’s color.
This is another recipe you could try while camping. It would
be delicious wrapped and cooked in coals. They make a very pretty presentation with the contrast of the red tomatoes, green peppers, zuchinni and the the orzo. The flavors blend together beautifully.
You could also simply make an orzo
salad with the filling ingredients, although I would probably add a little
lemon juice. My husband loved it, even though he's a meat head because he enjoyed the bit I had left over. He showed up once the smell of the baked stuffed peppers started to fill the room.
