Guava and Yogurt Side Salad PDF Print E-mail

Yogurt is much used in Indian cookery, particularly in savoury dishes.

Preparation Time : 10-15 minutes plus 1 hour chilling time

Cooking Time : about 2-3 minutes

Serves 6

Calories: 80 per portion

Ingredients:

300g natural Yogurt

1tbsp lemon Juice

3 canned whole guavas, drained, seeded and chopped

1 tbsp ghee or clarified butter

1tsp mustard seeds

1 green chilli, seeded and finely chopped

1tsp chopped fresh coriander, to garnish

Procedure

Beat the yogurt and lemon juice until smooth, then stir in the guavas. Heat the ghee in a small frying pan, add the mustard seeds, cover and cook over a medium heat until the seeds begin to pop. Remove from the heat, add the chilli and then fry gently for at least 10 seconds, stirring constantly. Stir the contents of the pan into the yogurt mixture. Cover and chill for atleast 1 hour. Sprinkle the salad with the coriander before serving.
