White fish always makes a healthy and low fat meal, but most of us don´t eat it often enough. Try to aim for 2 portions of white fish a week, as it is rich in protein and B vitamins. This dish is both quick to make and cook, and sevres as an ideal supper dish when you have returned from a hard day's work.
Ingredients

1 fish portion or fillet of white fish per person

salt and pepper to season

half a pint or one small bottle of dry cider

8oz of mixed wild mushrooms, or button mushrooms

3 tablespoons of flour
Method

Place the fish in a pan, sprinkle lightly with the seasoning

Add the cider until it covers the fish and bring gently to the boil

Simmer for around 6 or 7 minutes depending on the thickness of the fish fillets

Add the mushrooms, finely chopped, and simmer for another 3-4 minutes

Remove the fish from the pan, and keep warm

Mix the flour or cornflour to a paste with a little water

Add slowly to the pan, stirring continuously until the sauce is the desired thickness

Pour over the fish and serve
New potatoes and a selection of fresh vegetables would complement this dish well. You can freeze this dish successfully, and just thaw in the fridge when needed and heat slowly and thoroughly.
