Chicken always makes an excellent and low fat meal, and this dish is no exception. Remember to remove the skin if using chicken portions, otherwise chicken breasts are a good choice. This dish is very quick to prepare, taking only 5 minutes to put together. Then just put it in the oven and then relax whilst it cooks.
Ingredients for 4 people

4 chicken pieces

1 onion, finely chopped

1 jar of chutney

1 tsp tarragon
Method

Put the chicken in a casserole or ovenproof dish and scatter the onion over the top

Pour the jar of pickle over the top and sprinkle with the tarragon

Cover the dish and bake for around 30 - 40 minutes until the chicken is cooked through. If the sauce gets too thick, add a little water and stir.
Serve with basmati rice, couscous, roast vegetables or a green salad for a satisfying , healthy meal. You can ring the changes with this dish by using a different variety of chutney. Indian pickles can vary from mild to very spicy, so proceed with care!Save the really hot versions for when you are feeling brave.Sweet pickles like mango work well too as do spicy tomato or vegetable pickles.
