Easy Cheesy Spinach Recipe |

Do you ever buy the monster bag of spinach and wonder what to do with it? This recipe is perfect for using up large amounts of fresh spinach. Believe it or not, my kids ate this twice last week, and there are no leftovers to prove it! This is one spinach dish your kids are guaranteed to eat.
- 6 cups of fresh spinach, washed
- 1 medium onion, chopped
- 1 TBSP diced garlic
- 1/2 CUP parmesan cheese
- 1/2 CUP grated white cheddar
- 1/4 CUP water
- Olive oil, as needed
Preheat oven to 375F. Grease a small casserole dish (approx. 6X8 inches) with olive oil, and sprinkle half of the cheddar and half of the parmesan in bottom of dish. Warm a large frying pan and lightly sautee the onion and garlic in a little bit of olive oil. Once the onion is softened, remove from pan and set aside. Add 1/4 cup to water to pan and add the spinach. Cover with lid and let spinach steam for about 4-5 minutes. Remove spinach from heat and transfer to shallow bowl. Roughly chop the spinach into bite size chunks and add in onion/garlic mixture. Mix thoroughly and place in casserole on top of cheese. Sprinkle both remaining cheeses on top of spinach. Bake for 10-12 minutes until cheese is bubbly and brown.
