Dressings are crucial to any salad. For those who prefer a basic dressing,prepare your salad, take it to the table, and just before eating, pour on vinigar and oil, in the ratio of one part of vinigar to two parts oil. For those who prefer something a little fancier, the range is endless.Try the following recipe and experiment by creating your own. CLASSIC DRESSING
Ingredients
1tbsp(15 ml) cold water yolks from 3 hard boiled eggs
2/3cup(165ml) cream
1tbsp(15ml)white vinigar
1/4tsp(1ml)cayenne pepper

Procedure
Combine water and egg yolks in a blender. Add cream, vinigar and pepper and blend again. Chill.This mixture will thicken but should pour easily.
Makes approximately 3/4 cup(180ml)
