My family really enjoys these fun mexican wraps. For extra flavour, add 1tsp ground cumin along with the chilli powder and half a jalapeno pepper, minced, along with the sweet peppers
Ingredients:
4-6 Large flour tortillas
1tbsp vegetable oil
1 medium onion sliced
1lb boneless skinless chicken cut in thin strips
2 tbsp chilli powder
1 1/2 tsp dried oregano
3 tbsp all purpose flour
1 cup milk
1 each sweet red and green pepper cut in thin strips
salt and pepper to taste
Toppings
shredded lettuce
shredded Cheddar cheese
chopped fresh tomatoes
fresh lime wedges
sour cream
Procedure:
Warm tortillas according to package directions. In a large nonstick skillet, heat oil over medium-high heat. Stir fry onion until softened. Add the chicken, chilli powder and oregano. Stir fry just until the chicken is browned all over.Wisk flour into the milk until smooth. Stir into the skillet. Add the peppers, simmer, stirring, until the liquid is bubbling and thickened. Season with salt and pepper. Spoon the filling along the centre of each tortilla. Add the toppings. Fold up the bottom of the tortilla, then fold the sides to enclose the filling.
