My husband and my kids love this Bacon Potato Chowder Soup recipe.  Whenever I have served it, everyone asks for the recipe.  If you like seafood, you can add a small can or two of chopped clams (drained and rinsed)--that's the way my father-in-law likes it!  Serve with a loaf of good sourdough...yummy!

Bacon Potato Chowder Recipe Ingredients:

 

  • 8 slices bacon cut into pieces
  • 2 cups cubed red potatoes
  • 1 c. chopped onions
  • 1 c. sour cream
  • 1 ¼ c. milk
  • 1 can cream of chicken soup
  • 1 can whole kernel corn, drained
  • ¼ tsp. pepper
  • ¼ tsp. thyme

 

 

 

 

 

 

 

 

Bacon Potato Chowder Recipe Instructions:

  • In large pot, cook bacon over med. heat for 5 min.; add potatoes and onions.  
  • Continue cooking, stirring occasionally, until potatoes are tender (about 20 min.).  
  • Add remaining ingredients (add clams, drained and rinsed, if you like).  Continue cooking, stirring occasionally until heated through.
