My husband and my kids love this Bacon Potato Chowder Soup recipe. Whenever I have served it, everyone asks for the recipe. If you like seafood, you can add a small can or two of chopped clams (drained and rinsed)--that's the way my father-in-law likes it! Serve with a loaf of good sourdough...yummy!
Bacon Potato Chowder Recipe Ingredients:
- 8 slices bacon cut into pieces
- 2 cups cubed red potatoes
- 1 c. chopped onions
- 1 c. sour cream
- 1 ¼ c. milk
- 1 can cream of chicken soup
- 1 can whole kernel corn, drained
- ¼ tsp. pepper
- ¼ tsp. thyme
Bacon Potato Chowder Recipe Instructions:
- In large pot, cook bacon over med. heat for 5 min.; add potatoes and onions.
- Continue cooking, stirring occasionally, until potatoes are tender (about 20 min.).
- Add remaining ingredients (add clams, drained and rinsed, if you like). Continue cooking, stirring occasionally until heated through.
