This fun recipe is not, as the name might suggest, simply a sandwich filled with apple! The fruit actually forms the “loaf” in the recipe, and the filling..well that can be anything that your kids like to eat!
This recipe makes a great snack for lunchboxes, as long as you wrap the apple in cling film to stop it going yellow. Method
- Take one large apple and slice across the apple until you have a series of layers about half an inch thick.
- Make up the filling of your choice. Try soft cheese and walnut, grated cheddar cheese with raisins, peanut butter... whatever takes your fancy.
- Rebuild your apple, spreading a generous portion of filling between each layer, until the apple is reassembled.
Vary the taste and ring the changes for lunchtimes. Use your inagination, and whilst kids might love the novelty of the snack, you can be sure that they are getting a healthy, filling treat. These snacks are very quick to prepare, making them ideal for busy moms, and make a great after school treat that is the ultimate “healthy fast food”.
