My little one has recently started feeding herself and she loves this dish. The food is small and soft so that she is able to easily feed herself. There is enough of this casserole for my husband and I to enjoy as well or it is yummy for a leftover lunch the next day.

Originally an Italian "leftover salad", Panzanella calls for simple ingredients such as day old crusty bread and black olives. I have a picky picky family, and my culinary skills are pretty, well, limited, but this dinner is always a hit. My mom made this whenever we picnicked as kids, and we eat it now pretty much all Spring and Summer long, at least once a week. Quick, easy, healthy, and cheap! Yeah!!

We made this over the festive season, and with the lack of a kitchen in my new house proving problematic, I was looking for a rich, but easy-to-make pudding for New Year´s Day. This fit the bill perfectly, and whilst it is not a true “tiramisu”, I used ingredients that I had in the house to improvise and it still tasted delicious. Thankfully, a few weeks later our Spanish builder had finally fitted the kitchen, meaning I could get back to "proper" cooking again! Just don´t ask how we managed Xmas dinner!

My kids love the slightly sweet, spicy filling of these stuffed peppers, and served with rice, couscous or salad they make a tasty and nutritious meal. Adapt the filling to your own taste . Remember you don´t have to use meat, so for a vegetarian version substitute Quorn, mushrooms or a mix of spicy seasonal vegetables.

Spring is here , and the weekly markets are awash with fresh and tasty seasonal vegetables. As the weather gets hotter, salads become a more attractive option – easy and cheap to prepare and no cooking needed!But they can get a little boring, so liven things up at lunchtimes with these different and very tasty options. These are so delicious that even my “no salad eating” husband enjoys them.

Ditch those store-bought granola bars that are full of refined sugar and preservatives. Using ingredients from a bulk foods or health food store, you can make homemade, delicious granola. It's good for breakfast, lunch, or as a quick snack; it's also versatile--you can have it plain or mix it up with other ingredients. My own favourite ways of having granola are with plain yogurt and with sliced fresh banana. And the best part is that kids will like the natural sweetness of honey combined with the crunch of the granola.

Note: This recipe is not nut-free, but you can omit or substitute them.
