Sometimes it's not possible to eat the corn right off the cob, such as when a child has a loose tooth, when someone in the family has braces, retainers, or other sensitive dental work. In that case, a corn stripper is a handy tool to have in the kitchen. Yet many of the corn cutters on the market are flimsy and clumsy to use. Most of them don't have blade protectors, inviting accidents such as sliced fingernails or fingertips.

Fresh Corn Salsa

  • 2 ears of corn, boiled or grilled
  • 1 avocado, diced
  • 12 cherry tomatoes, halved, or one tomato, cut into cubes
  • 1/2 a red onion, chopped
  • 1 clove of garlic, chopped
  • 1/2 cup of cilantro
  • 2 jalapeno peppers, seeded and diced
  • 1 tablespoon of lemon juice
  • Salt and pepper

Strip the corn off the cobs and mix all the ingredients together. The lemon juice will keep the avocado from turning brown. Chill for two hours. The salsa will stay fresh for 1-2 days. On the second day, the salsa will be spicier than when it is first made.

avatar Thanks for evaluating these, Suzanne! I was just looking at them last week. We always use a sharp knife to strip the kernels off of the cob, and I decided against buying this. I wonder if I should go back and get one anyway. Decisions, decisions!
