Tangy Chicken Waldorf Salad PDF Print E-mail

This Tangy Chicken Waldorf Salad recipe is great for using up leftover chicken on those hot summer nights when you don't feel like cooking. This is a twist on the classic Waldorf Salad my grandmother makes.

Ingredients:

  • 2 Granny Smith Apples, cored and chopped
  • 1.5 cups cubed cooked leftover chicken
  • 1 stalk celery, chopped
  • 1/3 cup raisins (or golden raisins) OR 1 cup halved grapes
  • 1/2 cup toasted walnuts
  • 1/4 cup light mayonnaise or plain yogurt
  • 1 tblsp fresh lime juice
  • 1 tsp sugar
  • salt and pepper to taste

Directions:

In a medium bowl, whisk together mayo (or yogurt), lime juice, sugar, salt, and pepper. Add rest of ingredients and mix together. Serve salad on fresh lettuce leaves.
