Tangy Chicken Waldorf Salad |

This Tangy Chicken Waldorf Salad recipe is great for using up leftover chicken on those hot summer nights when you don't feel like cooking. This is a twist on the classic Waldorf Salad my grandmother makes.
Ingredients:

2 Granny Smith Apples, cored and chopped

1.5 cups cubed cooked leftover chicken

1 stalk celery, chopped

1/3 cup raisins (or golden raisins) OR 1 cup halved grapes

1/2 cup toasted walnuts

1/4 cup light mayonnaise or plain yogurt

1 tblsp fresh lime juice
-
1 tsp sugar
-
salt and pepper to taste
Directions:
In a medium bowl, whisk together mayo (or yogurt), lime juice, sugar, salt, and pepper. Add rest of ingredients and mix together. Serve salad on fresh lettuce leaves.
