My father’s mother was the queen of the canned foods—she didn’t do much cooking. A big treat at her house was made by Chef Boyardee. My father used to comment that my mother didn’t buy normal food, but she bought ‘weird stuff,’ like flour, oil and sugar. I grew up thinking that special food came from cans, too, but I didn’t like the fact that you needed a can per meal. After you finished the can, the ravioli or spaghetios were gone. It just isn’t economical to spend all your grocery money on ready made canned food. It’s much cheaper to fill your pantry with ‘weird stuff’, too.

This breakfast of Oat Bran with Blueberries, Cinnamon and Skim Milk takes some getting used to, but once you develop a taste for it, it will give you an excellent and easy start to every day.
The photo shows a bowl of porridge oats.
If you are not a porridge eater, start with an easy-to-make porridge - even the stuff in the little packets is OK. If you have to begin with the sweetened, flavoured kind, go ahead. The goal is to gradually reduce the sugar and additives and to replace the porridge oats with oat bran until you are eating pure oat bran with fruit.

More and more kids are being diagnosed with celiac disease, food allergies, and food intolerances which means people are more conscious of what their kids are eating. As this happens, there is also an increased awareness of people living vegetarian and vegan lifestyles.
This is all wonderful for those of us with dietary restrictions - it helps when people think before they offer to share food. For people without food restrictions, it's easy to feel stumped at what to bring to a pot luck!
This recipe is easy, free of all the major allergens, gluten-free, and can also be vegan - and yet no one will know it's healthy because it is soooo good. It tastes equally good if you use sweet potato or butternut squash in place of the pumpkin. Enjoy sharing this delicious treat!
