Multicoloured Matchstick Vegetables |

Getting your kids to eat more vegetables can be a daunting task, and an uphill battle at mealtimes! Try improving the presentation of vegetables, and see if you can get your child´s attention with novelty dishes.These vegetable matchsticks are quick and easy to make, and the more tempting mix of textures and flavours might just tempt the little ones to eat them!
Ingredients

2 small swedes or turnips

2 carrots
-
2 courgettes

1 small onion (red onion or salad onion is milder for kids)

suitable dressing for tossing the veg. Try honey and mustard, honey and soy sauce, or simply melted butter.
Method

Cut the swede or turnip, carrots and courgettes into matchstick size, uniform pieces.

Finely dice the onion, although if like my son, the kids don´t like onion, you can miss this part out.

Blanch the vegetables quickly in boiling water for around 3 or 4 minutes. They should still retain their crunch, which is important, as the main complaint children have is to do with “soggy veg”.

Mix together a dressing that your child loves, be it blue cheese, honey and mustard, soy, or plain old butter.

Toss the vegetables in a little dressing and serve as a side dish.
You can freeze any extra vegetables if needed, but they are better eaten hot once re-thawed.
