I love healthy foods and Honey-Mustard Salmon fits the bill nicely. I work a long day and don't take time to eat healthy all the time and my friends get on my case about eating healthy so I go ahead and make some Honey-Mustard Salmon, what with the new year and all those healthy choices we plan to make. This dish only takes about 15 minutes to make and 3 minutes to prepare. The sweet honey and hot mustard are wonderfully balanced in this Dijon sauce.

Honey-Mustard Salmon

Ingredients for Honey-Mustard Salmon

  • 1 1/2 pounds salmon fillets, four 6-oz pieces, about 1" thick
  • 1/8 teaspoon sea salt  (a pinch)
  • 1/8 teaspoon black pepper (a pinch)

For the sauce: 

  • 1/4 cup Dijon mustard   
  • 2 tablespoon honey   
  • 1 tablespoon water   
  • 1 tablespoon white wine vinegar  *  
  • 1/4 teaspoon dry mustard, hot-variety   
  • 1/4 teaspoon garlic powder   
  • 1 teaspoon dill

Making Honey-Mustard Salmon

Preheat oven to 350ºF. Spray a little cooking spray in a small shallow baking dish .

Sprinkle both sides of salmon with salt & pepper and place your seasoned salmon in the baking dish.

In a small bowl, whisk together Dijon mustard, honey, water, vinegar, dry mustard and garlic powder. Useing a spoon, drizzle 2 tablespoons of mustard sauce over the fillets and then brush it around so you don't contaminate the sauce. Stir dill into remaining mustard sauce and set aside.

Bake until salmon is fork-tender, about 15 minutes. Serve salmon with reserved mustard sauce spooned over top.
 
Serve with a nice rice dish which also cooks in about 15 minutes and serve with a good serving of French~style green beans for a lovely meal for four.

* Notes about vinegar:
Use white wine vinegar if you have it, second choice would be rice wine vinegar (my favorite), next choice would be a little apple cider vinegar, which is nearly a must to have in your kitchen. If you don't have this, simple add 1 teaspoon of white vinegar.
