Making fresh guacamole is surprisingly easy. Choose avocados that are dark rather than green. Ripe avocado will be soft under the skin, not hard. Using fresh lemon juice will keep the guacamole green, otherwise the color can turn dark and brownish.
- 3 avocados
- 1 red pepper, diced
- 1/2 small red onion, diced
- 1/4 CUP olive oil
- Juice of 2 lemons
- 1/4 TSP sea salt
Mash the avocados to desired consistency. Use a fork for chunky guacamole, use a blender if you prefer smooth. Add in the oil and lemon juice and mix well. Stir in the veggies and sprinkle with sea salt. If you would like a creamy guacamole, add in 1/2 Cup of sour cream. Sometimes we will add tomatoes, add only as needed. The tomatoes will make your guacamole watery. Keep leftovers in fridge for up to 5 days.
