Research reported in the popular press suggests that tomatoes are good for the prostate. It's not too early to think about that! We already knew the tomato is rich in vitamin C and because of its vibrant colour, it's bound to have good phytochemicals that haven't been discovered yet.
If you are lucky enough to live in Paris, you can go to the market shown here and buy all these beautiful fresh tomatoes in a rainbow of colours. If, like me, you have a long winter, just get some canned tomatoes. Go for the crushed or diced, with nothing added.
Simple Way to Add Tomatoes to A Meal and Impress Everyone
This works with chicken and pork especially.
In a baking dish about 3 inches deep, put a bit of olive oil. Then lie the meat on top of it, in a single layer.
You can cheat and not mix up the sauce separately, if you're really pressed for time, but it works better to combine in a bowl the tin of tomato sauce (large tin serves 4, use 2 tins for heavy eaters), and some herbs. I prefer the Italian suite of oregano, garlic powder, basil and my secret ingredient, cinnamon.
Because you haven't pre-cooked the meat, you need to cook the whole dish until the meat is cooked thoroughly. I use a pre-heated oven at 400 degrees because I am impatient. Typically takes about 35 minutes, depending on the thickness of the meat.
I don't cover it, stir it, check it or fuss with it. When you smell the tomato sauce cooking you are getting close to the end.
And bonus, there are many variations on this. If you want a one-pot meal, add some small potatoes or pieces of large ones, onions cut up, eggplant, really any veg combination you like. (Carrots, however, are slow cookers). You could easily take mixed frozen peas and carrots and mix them into the sauce for a kind of secret vegetable boost.
To serve, either dish it out directly on to plates, or put it onto a pretty salad bowl, serving bowl or platter, and let everyone help themselves.
