It's so easy to stumble out of bed, pour a simple bowl of cold cereal, microwave a packet of oatmeal or even open a container of yogurt.  For many of us, just finding SOMETHING our toddlers will eat for breakfast is a daily challenge.  Here are a few ideas to brighten your toddler's breakfast plate.

 

BLUEBERRY SOUP

 

When I first saw a recipe similar to this one in a magazine, I nearly gagged.  Then I tweaked the recipe to suit my own tastes a bit and tried it.  SO good. 

My son's favorite food is the blueberry, so this soup is going to be a breakfast staple at our house now that the weather is getting warmer.  Great served with lemon poppyseed muffins or cinnamon toast.

  • 1/2 cup sour cream
  • 1-10 ounce package frozen blueberries, partially thawed
  • 2 tablespoons sugar

In a covered blender, combine all ingredients until smooth.  Garnish with a mint sprig and lemon wedge if desired. 

Yield:  1 3/4 cups, or 2 servings

 

 

BREAKFAST PIZZA

 

What kid doesn't like pizza?  Imagine the smile on your toddler's face when you serve pizza for breakfast!  If you're not a fan of sausage, replace it with ham, mushrooms or fresh tomatoes. (Or use them all!)

  • 1 package (8 ounces) refrigerated crescent roll dough
  • 6 ounces breakfast sausage patties (or crumbled sausage)
  • 1 cup frozen cubed hash browns
  • 3 tablespoons butter
  • 3 eggs, beaten
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 3/4 cup shredded cheddar cheese

Heat oven to 350 degrees.  Spray pizza pan with non-stick cooking spray.  Spread crescent roll dough to fit the pan.  Crumble sausage and brown in a skillet, about 6 minutes.  Drain and transfer to a plate.  In same skillet, cook hash browns in 2 tablespoons butter, 10 to 12 minutes.  Transfer to another plate.  In same skillet, melt 1 tablespoon of butter.  Add eggs and scramble over medium heat.  Sprinkle sausage, hash browns and eggs onto dough.  Season with salt and pepper and top with shredded cheese.  Bake at 350 for 20 minutes, or until cheese is melted and edges of pizza are browned.  Remove from oven and cool 2 minutes. Slice and serve.

Yield:  6 slices

 

POLKA DOTTED WAFFLE STICKS

 

Whole-grain waffles are fun to eat and packed with fiber.  Add a little cream cheese and a few dollops of jelly and you've got a fun and healthy breakfast treat!

  • 2 square whole-grain waffles
  • 1 tablespoon cream cheese
  • 1 tablespoon strawberry jelly (or jelly/jam/preserves of your choice)

Toast waffles according to package directions and cut into 6 sticks.  Spread each stick with cream cheese, then use a spoon or squeeze bottle to dot on the jelly. 

Yield:  2 servings

A WEEKEND TREAT 

If weekday mornings are crazy at your house, save these fun breakfasts for the weekend and have the whole family help out in the kitchen.  Your toddler will look forward to seeing what new breakfast surprise awaits!
