It seems everyone becomes Irish on March 17th, the date we celebrate St. Patrick's Day. I am part Irish, grew up in New Jersey and have lived in California almost twenty-five years. As a teen I regularly made Irish Soda Bread for family gatherings, as well as potato soup and lasagna.
My son's middle school is having a non-uniform dress day in honor of St. Patrick's Day. I wonder how many kids will be wearing green shirts. I don't really see teens going the green sock route.

Shepherd's Pie
A traditional shepherd's pie includes carrots, onions and gravy along with the beef, mashed potatoes and corn. I would try adding celery or green beans to make it a green dinner and skip the carrots.
A Vegan & Vegetarian shepherd's pie uses gluten free flour and soymilk for the gravy and includes celery and asparagus.
