This is one of those recipes that I love to prepare for dinner, because everyone in the family gladly eats it, it comes together easily, and it doesn’t break the bank. Even my picky kids—who usually feel the need to try to identify every different color and texture on their plates, and who get nervous when “everything’s touching everything else”—love this!

I have nothing against giving my kids a sweet treat once in a while, but isn’t it nice when you can serve them something that’s both nutritious and delicious at the same time?

This pumpkin bread is a staple at our house, particularly around Halloween and Thanksgiving, when everyone’s thoughts turn to pumpkins. It comes together very quickly (even when the kids help, despite my recent post!) and freezes beautifully. There’s no reason not to have a few slices in the freezer ready to defrost at any time.
