Want a great recipe that is quick and easy on preparation and cooking time? This wonderful chicken salad is baked with a light layer of potato chips for a unique extra crunch! Serve this dish for lunch or as a light dinner.
HOT CHICKEN SALAD
2 ½ cups chicken,
cooked and cubed
1 cup celery,
chopped
2 tbsp. onion,
chopped
1 ½ cups mayonnaise
2 tbsp. lemon
juice
½ cup sliced
almonds
salt and pepper to taste
¼ cup parmesan
and romano cheeses, grated
1 cup potato
chips, crushed
Combine all ingredients except for cheeses and potato
chips. Pile lightly in a layer pan and
sprinkle with grated cheeses and crushed potato chips. Bake at 450 degrees for 15-20 minutes.
