To make lemon twists, thinly slice a lemon and cut a slit in the centre of each slice. twist the slice from the cuts.

Preparation Time : 15 minutes plus overnight marinating time

Cooking Time: 5-6 minutes

Serves 4

Calories: 200 per portion

Ingredients:

675g chicken breast

For the marinade

150 ml natural yogurt

1tbsp grated root ginger

2 garlic cloves crushed

1 tsp chilli powder

1 tblsp ground corriander

1/2 tsp salt

juice of 1 lemon

2 tbsp oil

For the garnish

1 onion, sliced

2 tomatoes quartered

4 lemon twists

Procedure

Skin, bone and cube the chicken breasts. Mix all the marinade ingredients together in a bowl. Add the chicken cubes, stir well and leave in the refrigerator overnight. Thread the chicken on to the skewers and cook under a hot grill for 5-6 minutes, turning frequently. Remove the chicken from the skewersand arrange on individual serving plates. Garnish with onion, tomato and lemon to serve.
