A Healthier Take on Shepherd’s Pie |

My husband loves good old-fashioned comfort food—and his favorite is Shepherd’s Pie. This healthier version of the traditional favorite uses ground turkey and extra veggies to make an easy dinner in one dish.
Ingredients

1 lb. ground turkey

1 c. frozen peas

1 c. frozen corn

½ medium onion, chopped

3-4 medium potatoes

2 tablespoons smart balance (or other healthy butter alternative)

¼ c. skim milk

Splash of olive oil
- Salt and pepper to taste
Directions
- Preheat oven to 350. Scrub potatoes, chop into bite-size pieces (leave skins on for an extra boost of fiber), and put in a pot with some water to boil.
- While the potatoes are cooking, sauté the onions with a splash of olive oil, then add the ground turkey to brown.
- Add some salt and pepper to the browned turkey.
- Once potatoes are soft, drain water, add butter spread and milk, and mash.
- In a 2 quart casserole dish, put browned turkey on the bottom layer, then add corn and peas, then top off with mashed potatoes.
- Sprinkle with more salt and pepper, then pop in the oven for about 20-25 minutes until potatoes start to turn golden brown on top. Serves 4
