Chocolate Cake Mousse PDF Print E-mail

Left over chocolate cake can be turned into a rich dessert.

Preparation time: 20-30 minutes

Chilling time: 4 hours

Ingredients:

2-4 thick slices stale chocolate cake

3oz plain cooking chocolate

3 seperated eggs

3oz castor sugar

2tbsp concentrated chill orange juice

1/4 pint double cream

2tbsp grated chocolate

Procedure:

Melt the cooking chocolate in a bowl set over a pan of simmering water. Beat the egg yolks with the sugar until pale and fluffy, and stir in the melted chocolate. Fold in the orange juice and diced cake . Whip the egg whites and the cream, seperately until thick. Carefully fold both into the chocolate mixture and turn into a serving bowl or individual small dishes. Chill. Sprinkle with coarsely grated chocolate before serving.
