This is a really simple, but tasty dessert which my kids love. Depending on the amount of time you have, you can use home made apple puree or a commercially prepared substitute. If your kids like the taste of apple, they´ll love this! Using ready made apple puree, this dessert takes around 10 minutes to prepare.
Ingredients

2 eggs, separated

350g /12oz apple sauce (home made or canned)

rind and juice of 1 lemon

castor sugar, or sugar substitute

sponge finger biscuits for garnish
Method

In a large bowl, combine the egg yolks, apple sauce, lemon rind and lemon juice.

Sweeten to taste either with castor sugar or a sugar substitute

In a second bowl, whisk the egg whites until they are stiff, and then fold into the apple mixture.

Spoon the apple fluff into individual serving bowls and chill for an hour.

Serve garnished with sponge fingers for dipping!
Cooking tips!
You can keep the sugar content lower by using unsweetened apple puree.If you are not watching calorie and fat content, an extra-luxurious version can be made by beating a carton of whipping cream until thick and then folding into the apple sauce before adding the egg whites.
