campfire.jpgWe just got back from camping so I thought I would share a few easy campfire cooking ideas that worked for us.

 

Baked potatoes

Cut them in half and get the kids to put a dab of butter in between along with a slice of onion, carrots or other favorite vegetable. We used onion but zucchini or peppers would also be good. Then wrap them well in tinfoil.

An adult can then place them in the coals and fetch them out within 20 minutes to half an hour. These melt in your mouth and are so delicious and easy. Sweet potatoes would also work well with this method.

Smores

Smores are a great treat for dessert and they’re perfect for around a campfire. First we roast our marshmallows on sticks or skewers, place them between two graham crackers and add a couple chocolate chips before closing.

Chili

Bring along a can opener for this one. We used one pound of cooked ground beef, one large can of brown beans, one small can of red kidney beans, one large can of diced tomatoes, two packages of onion cup a soup, a little salt and about five tablespoons of chili.

We like ours with kick and the chili spice mix I buy seems to be fairly mild. We used the onion soup mix because I ran out of onions but it was delicious and less work. This is a great one pot meal, which also means fewer dishes. Dishes are no fun to begin with but are even worse when camping.

Chilidogs

To make it even more fun, supervise your children while they roast wieners over the fire, place them in a bun and add a scoop of chili. Chilidogs are very yummy, filling and more nutritious than plain hot dogs with ketchup.
