After pasta and potatoes, rice is probably the next most used
carbohydrate base used when preparing meals. But there always seems to
be leftover rice that doesn't get eaten, gets forgotten, and ultimately
ends up in the compost. Here are ten simple ideas to use up that
leftover rice.

For some people, some veggies need to be dressed up. For my husband one
of those vegetables is broccoli. It needs to be cooked and it needs to
be dressed. Here is one of the most dressed up ways to serve this
nutritious green veggie.
One of the most inexhaustible vegetables is the potato. There are so
many ways to cook with this nutritious spud and every way makes it
taste different. Don't be afraid to dress up your potatoes or your
scalloped potatoes.
The word chilli brings to mind the simple ingredients of ground beef
and kidney beans but this simple and hearty recipe has evolved over the
years to include the unexpected. Here is an updated meatless version of
an old favourite with lots of vitamins, flavour and texture. Serve it
up with a whole wheat role or biscuit and a serving of your favourite
fruit.
One of the best ways to squeeze in a few servings of fruit (and maybe a
vegetable) during the hot months of summer is with an ice cold
smoothie. Over the last few months I have been developing smoothie
recipes to make in my Magic Bullet Pro. While this blend is incredibly
convenient these recipes can be made in any blending device made to
handle ice cubes.
Even in the hot summer months, I enjoy hot soup. It is tasty, nourishing and uplifting. Fresh butternut squash
has a rich yellow color that screams sunshine in my bowl. And yours
will be too, with this easy recipe.
