I want to teach you to make and preserve apple butter. However before we learn how to make apple butter, we should learn how to make applesauce, as apple butter is made from applesauce. In addition, before we start learning to make and can up some applesauce and apple butter, we need to learn a few tricks of canning basics. So therefore, I will post a few articles about Canning Basics, and then Making Applesauce, and then we can get down working on Making Apple Butter later.

I also want to talk about my favorite ..... those great big red ripe tomatoes that are just now starting to blossom out.

As you can gather I love cooking, gardening, and canning. Making Salsa, pickled garlic, jar up some jalapeno peppers, tomato sauce, Enchilada Sauce, Chipotle in Adobe Sauce, awesome dill pickles, hot dog relish, corn relish, sweet pickle relish, pickled spiced peaches for Thanksgiving, and a whole range of foods, such as sun-dried tomatoes, and anything else people write and ask about. I have a whole set of articles planed out for the summer and fall. So remember When Life Gives You Lemons… Make Ketchup

I will be teaching about water bath canning this year. I will help you learn about large batches in quarts, what to do in pints, and what you can do in single jars for a very little investment. Next season, during the winter, I can start teaching about pressure-cooking and pressure canning. This year I will teach the safe and very easy topics, and then we have a base to grow from. So please write in and share with me what you want to learn.

What worries and concerns, or questions you have.

How to convert a dash, or a pinch of ….

Canning and Preserving Food is my passion. I love the back to nature,  self-sufficient appeal to it. If I could be more Off-the-Grid I would. I grow and garden a lot of our food, and of course cook from scratch and preserve it. I love teaching local folks about how to use this age old skills, that our grandmothers had, but are starting to be lost.
