This makes a delicious light meal served on its own, in which case increase the quantities accordingly.

Preparation Time: 30 minutes

Serves: 4-6

Calories:110-70 per portion

Ingredients:

  • 175gms/6oz cooked chicken meat shredded
  • 1-2 tomatoes, peeled and chopped freshly
  • ground black pepper
  • 1 green chilli finely chopped
  • 1/2 lettuce, coarsely shredded
  • 1 small onion finely sliced
  • 1 green pepper, seeded and thinly sliced
  • 1-2 sprigs corriander leaves, chopped
  • 2 teaspoon cumin seeds
  • juice of 1 lemon
  • Pinch of salt or black salt

Procedure:

Mix together the chicken and all the remaining ingredients in a large bowl or dish. If possible leave the mixture for 30 minutes before serving to allow the flavour to blend together.
