This makes a delicious light meal served on its own, in which case increase the quantities accordingly.
Preparation Time: 30 minutes

Calories:110-70 per portion
Ingredients:

175gms/6oz cooked chicken meat shredded

1-2 tomatoes, peeled and chopped freshly

ground black pepper
-
1 green chilli finely chopped
-
1/2 lettuce, coarsely shredded

1 small onion finely sliced
-
1 green pepper, seeded and thinly sliced
-
1-2 sprigs corriander leaves, chopped
-
2 teaspoon cumin seeds
-
juice of 1 lemon
-
Pinch of salt or black salt
Procedure:
Mix together the chicken and all the remaining ingredients in a large bowl or dish. If possible leave the mixture for 30 minutes before serving to allow the flavour to blend together.
